  • Personal hygiene Implement critical control points system, control system procedures, evaluation of corrective actions within the production floor
  • Premises Implement critical control points, F&B and engineering preventive maintenance list and action plan rectification
  • Delivery and storage Implement tracking system for control of supplier operating licenses, daily checklist by shift for chiller temperature control and control of dry store quality and standards
  • Preparation and serving Implement cooking, storing and delivery food standards
  • Cleaning implement regular tour of the production floor with Production Manager and Section-in-charge, weekly hygiene meeting to review minutes and outstanding issues, dishwashing control points
  • Training implement involvement in food safety training for food handler and evaluation of efficiency of training from chemical supplier
  • Document and control implement weekly checklist for food preparation / storekeeper / cost control / stewarding / food production, monthly food safety training report, monthly food lab test report (if needed) and chemical supplier group audit report.
  • Responsible for development of work instructions and job safety analysis for production floor
  • Responsible for training and certification of production team members
  • Production Operations To assist with orders when neccessary
